BAKING: Homemade Scones


Before I get into the argument of how the heck you pronounce scones the question no one really knows the answer knows. I was in the mood for baking and scones is something I have never tried but thought I would give a go and see how they turned out. I'm not one for blowing my own trumpet (no seriously!) but they turned out actually amazing and just had to share the recipe I did and you so have to give them a go.



Makes: 12
Prep: 20 min
Bake: 15 min

You'll need:
455g Self-raising flour
2 flat teaspoons baking powder
75g butter (room temp)
50g caster sugar
2 eggs
220ml milk

Instructions:

1. Lightly grease two baking trays with butter (not the 75g) using kitchen roll so the scones don't stick to the tray when baking. Pre-heat oven to 220°C/425°F/Gas 7.
2. Using a large mixing bowl add the flour, baking powder and butter and rub through with your hands until it looks like breadcrumbs. When you are finished that add the sugar.
3. In a measuring jug break the two eggs into a bowl and whisk until blended then add the milk. (take one tablespoon out of the mixture for glazing the scones before they go in the oven).
4. Slowly add the mixture to the dry ingredients and fold/mix until you have a soft dough. When you think it is two wet keep working at the mixture and it will finally become soft it's all about patience at this step.
5. Take the mixture out of the bowl onto a floured surface and flatten it out using your hand or rolling pin if you have one handy. and cut into circles using cutters or if you don't have them find something similar I used a ramekin dish.
6.  When all scones are cut out use reserved mixture for glazing and using a teaspoon put over the top of each scone.
7. Bake for 10-15 minutes then place on wired rack when they are well risen and golden. Serve with clotten cream and jam and you are basically half way to an afternoon tea.
